Welcome back to the All Things Southern kitchen, friends. I’ve got just what the doctor ordered today, Chocolate Cream Pie! Yeah, we're kind of in a celebratory mood around here, and what better to celebrate with than chocolate? Right! Let’s get cooking!
"Chocolate Cream Pie"
1/2 cup cocoa
1 1/4 cups sugar
1/3 cup cornstarch
1/4 teaspoon salt
3 cups milk
3 tablespoons butter or margarine
1 1/2 teaspoons vanilla extract
1 baked pastry shell
1 carton cool whip
My chocolate cream pie sets up really light and pretty and creamy. We'll begin by taking a medium saucepan and stirring together our dry ingredients—cocoa, sugar, cornstarch and salt.
Now, we’ll gradually add three cups of milk to the dry ingredients. Don't just dump it in because it will clump. Stir until smooth and cook over a medium heat, stirring constantly. Once it boils we’ll let it roll for a minute and remove it from the heat. Then we’ll stir in our butter and vanilla and that’s it! Pour into our prebaked pie shell, refrigerate for a couple, and top with cool whip before serving.
