Hello folks, welcome back to the All Things Southern kitchen! Today’s recipe is for all you praline loving southerners out there, and for any of you folks outside the region who want to experience some good eating. Jump in and get your feet wet. I’m gonna show y’all how to whip up some Praline Muffins!
“Praline Muffins”
1 cup pecans chopped
1 cup light brown sugar
½ cup all purpose flour
¼ tsp baking powder
¼ tsp salt
2 eggs
½ tsp vanilla
2 Tsp melted butter
First, if you’re lucky, you grab some pecans you’ve harvested from your own front yard and chop up a cup. And if you’re not lucky, I reckon you take out a small loan for enough gas to run to the grocery store and pick up some. I’m just saying…
Now for the next step: I’ve taken a cup of light brown sugar, combined it with a half cup of all purpose flour, a fourth teaspoon of baking powder and a ¼ teaspoon of salt. We’ll mix this well and add a couple tablespoons of melted butter. Then we’ll stir in those pecans along with two eggs and a ½ teaspoon of vanilla flavoring. That’s about it! Fill up a dozen muffin tins to the half-way point and bake in a 300 degree oven for twenty-five minutes.
